Little balls of ham, cheese and walnuts (Bolitas de jamón, queso y nueces)

Last weekend we had some friends at home. We were eating, drinking and talking for hours. I prepared some tapas and a main dish. A friend of us brought the dessert.
The best of tapas is that it is less formal, everybody talks and eats. You can be sitting at the table or standing up. In fact we ate tapas in the kitchen. The worst thing is that eventually you eat more than in a formal meal.
This is a somewhat sophisticated "tapa", but very easy to make. You can make most of it the day before and keep it in the fridge.
This is my version of a recipe of Gastronomía & Cía.

Ingredients:
130g. of fresh cheese
80g. of "Philadelphia" cheese
120g. of ham
1 Handful of walnuts
1 Spoon of aromatics herbs ( Rosemary, thyme, basil, oregano...)

Mince the walnuts and reserve. Put the rest of the ingredients in a food processor and puree it. Keep this paste in the fridge and wait for 2 or 3 hours. Then you can make little balls with it. The last part is to cover the balls with the minced walnuts.
Balls could be made the day before and kept in the fridge. A few minutes before serving, just cover them with the walnuts
