Easter bread pudding (Torrijas)


I love "torrijas". In the old days, Spanish people made up this unpretentious pudding using the only ingredients they had: Yesterday´s baguette, milk, sugar and eggs.
It´s customary to eat it on Easter .

Ingredients:

1 Yesterday´s baguette cut into slices 2 cm.
1 Liter of milk
4 Spoons of sugar
The peel of a lemon, only the yellow part.
1 Egg
Cinnamon if you like.

Heat the milk with the sugar and the lemon peel. The milk will be flavored with lemon´s aroma . You can add some cinnamon too, if you like.

Place the bread slices on a dish and pour the hot milk on it. Wait until the bread absorbe all the milk.

Beat the egg. Coat the bread with the egg. Heat the olive oil in a frying pan. Fry the bread until it is brown. To serve, sprinkle some sugar and cinnamon.
