Granny´s asparagus soup ( Sopa de espárragos de la abuela)

Spring is the best time for asparagus.
This is my mother´s recipe. She used to make this soup at spring time when local fresh vegetables became more abundant in the market. It´s perfect for a dinner starter or a light lunch and very easy to make.
This soup is a good way to use the water where the asparagus were cooked.




Ingredients:

A bunch of asparagus
1 Small onion
1 Clove of garlic
1 Spoon of wheat flour
2 Spoon of olive oil
1 Small potato
Salt















Cook the asparagus in the water. Take a few of the cooked asparagus and cut them into small pieces.


Chop the onion and the garlic. Grate the potato.
Heat the olive oil, add the onion and the garlic and sauté it. Add the flour and fry lightly until it is golden.

Add the broth (The water were the asparagus were cooked), the grated potato and the asparagus.
Season with salt. Simmer it until the potato is cooked.
