Spanish omelette (Tortilla de patatas)




Tortilla de patatas is one of the most popular spanish dishes. You can eat it as a main dish or as a tapa. It´s very delicious. The secret of a good spanish omelette is using very good ingredients.

I would like to dedicate this recipe to grandma Janick. Today´s her "early" 80 birthday. This is my birthday present to her.

Ingredients

5 Eggs.

400g of Potatoes

Olive Oil

1 Chopped Onion

Salt


The first we have to do is peeling the potatoes and cutting them in thin slices. Season them with salt. Heat olive oil in a pan, add the potatoes. Potatoes must be covered with the olive oil. The oil shouldn't be very hot. The potatoes must be confited (Cooked in the olive oil at low temperature, 50º-70ºC//122º-158ºF) When the potatoes are half cooked add the chopped onion. Don´t worry if the potatoes are broken. When the potatoes are soft they´re ready.


Beat the eggs in a bowl. Wait until the potatoes and onion mixture is lukewarm and then strain them. Add the potatoes and onion to the eggs. Mix it carefully and season it with salt if it needs it.

Heat a little of olive oil in a fry pan. Pour the eggs and potatoes mixture into the pan. Move the fry pan with circular movements.

When the omelette begins to make bubbles, it´s time to turn it around. You can use use a big plate or a casserole lid. You can see how to make it in this video.

If you like the omelette very cooked you´ll have to turn it around two or three times more.

Serve with some green salad. Que aproveche!!!!!!

  4. Como podéis comprobar por el "anónimo", la tortilla es uno de los platos favoritos de casa.
    A mi me gusta así, jugosita por dentro, pero al resto de la familia le gusta bien cuajada. Después de hacer las fotos tuve que devolverla a la sartén y darle un par de vueltas más.
