Chickpeas salad (Ensalada de garbanzos)
Legumes are very common in spanish traditional food. We use to eat beans, lentils and chickpeas in stew or soup. But when it´s hot it doesn´t feel like eating hot dishes. There´s a summer way to eat legumes . You can prepare a legumes salad. It´s very easy to make and also very quickly. All you need is:
Ingredients
A glass jar of cooked chickpeas *
1/2 Red onion
1 Can of good spanish black olives
Good spanish olive oil
Salt
Pimenton (smoked spanish paprika)
* If you can´t get a glass jar of cooked chickpeas, soak the chickpeas in fresh water all the night, then cook them until they are tender. Wait until they cool down so they´re ready to use in the salad.
Just mix the chickpeas, the onion and the olives. Sprinkle with the olive oil and season it with salt and "pimentón". If you want you can add a tomato, some corn... Whatever you want.
I love Chickpeas. This looks like a perfect refreshing salad for lunch.
