Tomatoes stuffed with fresh cheese and herbs
In summer time, local markets are plenty of tomatoes. Tomatoes are plenty of flavor and vitamins, especially A and C vitamins.
Today recipe is tomatoes stuffed with fresh cheese and herbs.
Ingredients:
4 Red tomatoes
250g of fresh cheese
1/2 bunch of chive
A sprig of basil
1 Spoon of oregano
Salt and pepper
Wash the tomatoes and cut the peduncle. Cut the top of the tomatoes and put it apart . Empty the tomatoes with a spoon and put the pulp in a colander to drop the tomato juice.
Chop the herbs, the tomato pulp and grate the cheese. Mix all the ingredients well. Season it with salt and pepper.
Stuff the tomatoes with the cheese and herbs and put the previously cut tomatoes tops on. Put a little of stuff in the peduncle place.
Wrap the tomatoes with aluminium foil and cook them in a vapor basket for 30 or 40 minutes.
They can be roasted in the oven too.

I have to admit I've never tried stuffed tomatoes, but they look delicious. I'll have to give them a try. :)
